Countdown to Catching Up – Tea 8 (Counting Down to 10!)
My 3rd tea in the Countdown to Catching Up! This is a reblend from Frank’s era & I’m pretty sure I haven’t blended this tea since I took over. My recipe is a bit different from Frank’s blend for a couple of reasons. First & probably most importantly, most of the recipes that I should have gotten from Frank were lost shortly before the takeover during a computer crash. Ugh! Sucks, right? However, I have managed to get a knack for figuring out Frank’s recipes (for the most part) so, I think that I can recreate them pretty well.
Second reason: my black tea base is different. My recipe is a blend of Yunnan & Assam teas & with the pancake blend, I usually go a little heavier on the Assam than the Yunnan just because that maltiness goes nicely with the pancake flavor.
Third reason: I replaced the calendula petals in the original blend with actual freeze-dried pumpkin & pumpkin seeds. It looks more pumpkin-y like that. 🙂
But what isn’t (too terribly) different is the taste. Sure, it probably tastes different & you’d probably be able to spot the difference if you managed to unearth some of that previous blend from some 13 years ago or so (assuming age hasn’t had it’s way too much with the blend). But based on the things I wrote about this tea in my tasting notes . . . and this is rich & malty, sweet & pumpkin-y with a touch of butter & maple. I’m getting that satisfying, starchy note of a pancake. I even get that buttery, crispy edge of the pancake that I’m so fond of! I like this a lot & am so happy to be sipping on it now!
It’s not only tasty, but it’s also organic, vegan, gluten-free, allergen-friendly & all natural!
organic ingredients: black teas, freeze-dried pumpkin pieces & seeds & natural flavors
to brew: use 3g of tea to 12oz of nearly boiling water (205°F) & steep for 3 minutes. Strain & allow to cool for at least 10 minutes. Enjoy!
serving suggestion: I prefer my pancake teas served hot because there’s something about that starchy pancake flavor that just goes so nicely with the hot tea vibe. It just works. This tea is no exception & I love it served hot with just a teensy bit of sugar in the cup to help bring out some of the maple-y notes. It’s a lovely breakfast tea – that I’m more than happy to drink all day long. A perfect tea on these chilly days!
